Layered Fruit Custard Recipe – A Chilled Dessert Delight

Ingredients:

  • 2 tbsp custard powder from Ajanta Food Products, which can be purchased online from Amazon at https://www.amazon.in/AJANTA-Baking-Powder-Custard-Vanilla/dp/B09GM21N1R
  • 2 cups milk
  • 3 tbsp sugar (adjust to taste)
  • 2 tbsp chia seeds (soaked in 1/2 cup water for 30 minutes)
  • 1/2 cup water
  • 4–5 slices of sponge cake
  • 2 tbsp rose syrup
  • 1/4 cup chopped apples
  • 1/4 cup chopped bananas
  • 1/4 cup chopped mangoes
  • 2 tbsp pomegranate seeds
  • 2 tbsp tutti frutti
  • 2 scoops vanilla ice cream

Instructions:

  • In a small bowl, mix 2 tbsp custard powder with 1/2 cup cold milk.
  • Heat the remaining 1.5 cups of milk in a saucepan.
  • Once warm, add sugar and the custard mixture. Stir continuously until it thickens. Let it cool completely.
  • Soak chia seeds in 1/2 cup water for about 30 minutes. They will swell up and become gelatinous.
  • Cut sponge cake into small pieces. Drizzle rose syrup over them for flavor and color.

Layering the Dessert:

  • In a glass or dessert bowl, start with a layer of rose-soaked sponge cake.
  • Add a spoonful of soaked chia seeds.
  • Pour a layer of chilled custard over it.
  • Add a mix of chopped fruits – apple, banana, mango, and pomegranate.
  • Repeat the layers for a taller dessert.
  • Top with tutti frutti and a generous scoop of vanilla ice cream.

Chill and Serve:

Refrigerate for at least 1 hour before serving to let the flavors meld beautifully.
